Whitebait in Fish Sauce Caramel
Nahm pla waan is a delicious sweet and salty sauce that literally translates as âsweet fish sauceâ and can be as simple as dissolving palm sugar in fish sauce. It is widely eaten in Thailand as a condiment for dipping fresh fruits, most commonly firm, tart unripe green mangoes. In many cases, cooks add more elaborate ingredients to flavour the sweet fish sauce, such as fried shallots, fried garlic and fried dried shrimp, which add depth and umami. I use nahm pla waan for all sorts of things at the restaurant, but this is one of my favourite combinations: crispy fried whitebait tossed with the sweet, salty caramel.
